Japanese concept Niku X will open in downtown Los Angeles

Chubby Cattle International, the hotel group founded by Haibin Yang and David Zhao (Forbes 30 under 30 Alumni), announces its new restaurant concept, Niku X, which is set to open in December 2022. Niku X joins the impressive portfolio of pre- group’s technological guard, high-energy restaurants such as The X Pot in Las Vegas, one of the most profitable restaurants in the country.

Located in the heart of downtown Los Angeles at Wilshire Grand Central, guests can expect a menu of modern Japanese cuisine with a French influence. Niku X will incorporate the classic Yakiniku cooking style, a traditional Japanese technique used to grill meats. Star chef Shin Thompson, who is behind acclaimed Chicago restaurant concepts Bonsoirée and Furious Spoon Ramen, will provide diners with an extraordinary dining experience characterized by the use of artisan products and farm-to-table ingredients in a harmonious fusion.

“Our menu curation is meant to transport guests one dish at a time. Our certified Japanese A5 Wagyu is sustainably sourced from our private farm. We pride ourselves on being transparent and aware in our extensive Yakiniku process and preparation. Part of our history is to present Niku X’s specialty cuts that combine traditional flavors with a modern, multicultural twist,” says Executive Chef Shin Thompson.

Transparency and conscious preparation methods will be used to honor the origins of seasonal menu foods. Niku X will offer Japanese Yakiniku tasting menus featuring dishes such as seafood bites, a caviar course, a variety of premium Wagyu cuts and more.

Behind the bar, Niku X will offer a seasonal cocktail program focusing on Asian-inspired ingredients as well as a curated collection of wines from the old to the new world.

The restaurant will be located on the second floor of the tallest building in Los Angeles, the Wilshire Grand Center, with stunning views of the city. The 9,000 square foot space will feature a contemporary interior with mosaic tiles and modern Robatayaki grills, as Niku X celebrates cutting-edge design, technology and innovation.

Niku X will be open Tuesday through Friday for dinner from 5 p.m. to midnight and Saturday through Sunday from 12 p.m. to midnight.
